Mix ground beef, egg, and a little salt and pepper in a bowl until well combined. Place the bowl in the fridge for at least 10 minutes.

Roll the meat into balls, all about the same size. Flatten out into a patty shape.

Thinly slice the onions and heat a large skillet over medium-low heat and add the butter.

Once melted, add in the onions with a good pinch of salt. Stir to combine everything.

Cook, stirring often, for 20 to 30 minutes, until the onions caramelise. Then, set aside

Whisk the mayonnaise, truffle oil, garlic and lemon juice in a small bowl; add more truffle oil to taste. Then, set aside.

Cook beef patties in a pan or on a grill until done.

Toast all halves of the brioche buns and spread the truffle butter on each side of the bun.

Spread the aioli on the bottom of the buns and add the patty, cheese and caramelised onions. Top it off with the other half of the bun.

Fry up some fries and drizzle our truffle oil with a pinch of salt to create your own truffle fries to compliment your burger!
