Elevate your pasta night with this Truffle Pesto Pasta, tossed in a rich basil pesto, topped with golden crispy breadcrumbs, and finished with a touch of luxurious truffle dust. Perfect for a quick gourmet meal!
  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside, reserving ½ cup of the pasta water.
  2. Make the Pesto: In a food processor, combine basil leaves, Parmesan cheese, toasted pine nuts, peeled shallot and garlic. Pulse until coarsely chopped.
  3. Add the Oils: With the processor running, slowly drizzle in the olive oil and truffle oil until the mixture becomes smooth. Add lemon juice, and season with salt and black pepper to taste.
  4. Combine the Pesto and Pasta: In a large bowl, toss the cooked pasta with the pesto. If the sauce seems too thick, add a bit of the reserved pasta water until it reaches the desired consistency.
  5. Finish with Truffle Dust and Breadcrumbs: Plate the pasta and sprinkle with truffle dust and toasted breadcrumbs for extra crunch and flavor.
  6. Serve: Garnish with extra Parmesan cheese if desired. Serve immediately and enjoy your rich, aromatic Truffle Pesto Pasta!
